Whole 30 Breakfast Scramble

I get asked all of the time what kind of things we eat for breakfast and this is one of our GO TO. This recipe feeds my family of 5 (2 adults, 1 9yo, 2 toddlers).

Breakfast Egg Scramble

7 Eggs-  I prefer Cage Free, Range Free
4-5 small bell pepper poppers
Handful Spinach
1-2tbsp of Olive Oil
Preferred Spices (I used salt, pepper and an Italian blend)

Prep time: 10 min

For my kiddos in order to get them to eat the veggies in the eggs I have to finely chop up the spinach and peppers. I have some EXTREMELY picky EATERS.

Heat the oil on the stove med to high heat. While that is heating I chop up the veggies; wait for the oil to get HOT and throw them in the skillet. Saute them for a few min.

Whip up the eggs in the bowl and add the seasonings.

Pour over the sauted veggies and scramble. I use a spatula to help keep the eggs from sticking and to mix in all of the veggies.

Add fruit as a side of garnish and my kiddos ate it up and asked for more = WIN
