My kiddos loooove salmon and this is a great way for me to pair with veggies and them to have a great source of amino acids.
1 tbsp coconut oil melted
2 salmon filets
1/2 tsp salt
1/4 tsp pepper
1 lemon cut into wedges
Preheat oven to 450.. Line a baking sheet with parchment paper. Drizzle cooking fat over the paper and spread with brush. Place the salmon skin side down on lined baking sheet. Season the salmon evenly with salt and pepper and top with lemon. Bake 12-15 minutes. Fish is done when you can flake with a fork. We topped with a red pepper sauce found here and paired with fresh veggies.
