This is a GREAT go to recipe when meal planning fails you or you have an emergency event and need dinner before hand.
1 package of Aidell's Chicken Sausage (I used 1/2 of teriyaki pineapple and 1/2 cajun), sliced
1 yellow squash sliced and quartered
1 zucchini sliced and quartered
1-2 bell peppers cut into strips
2 cloves garlic
salt and pepper to taste
3-4 red potatoes
2 tbsp EVOO
Heat oil in skillet until hot. Add garlic and stir until aromatic. Add in sausage and brown (its already cooked). Remove from skillet but keep skillet going. Add in peppers sauté until translucent. Add in potatoes and cook on medium to high heat until tender (about 8-10min) add in squash and zucchini and cook for an additional 5 min until veggies are tender. Add sausage back to the pan and stir. Top with salt and pepper.
