Chicken Bone Broth

If you haven't heard bone broth has AMAZING benefits for you. We have started to incorporate this by drinking a cup a day of it to help with gut issues and give us an extra source of amino acids.

I used the carcass of our roasted chicken recipe and it made for a super easy transition.

Carcass from 3-4lb roasted chicken
2 carrots roughly chopped
3 stalks of celery roughly chopped
2 onions roughly chopped
5-6 parsley stems
1 sprig of thyme
2 tbsp apple cider vinegar
1 tbsp pepper
1 tbsp salt

I used my stock pot with a steamer insert. Add all ingredients to the pot and cover with water. Bring to a boil. Cover and reduce to low. Simmer for 12-24 hours (I left mine on for 24 hours.). Strain the broth through a mesh container (I didn't have to since mine already had the strainer). Transfer broth to multiple containers to speed up cooling. Let sit for several hours. I froze several ice cube container trays, left a couple in the fridge and froze several other cups of broth to last.
