This makes for a hearty breakfast addition. I will make a LARGE batch of these on Sunday and then just reheat in the skillet throughout the week.
3-4 Red Potatoes
2 tbsp of cooking fat (I used olive oil or coconut oil)
2 Bell Peppers
1 cup of mushrooms
2-3 cloves of garlic
1 tsp Italian Seasoning
Heat oven to 350. Heat cooking oil in oven safe skillet until hot. Add garlic and sauté until aromatic, add in mushrooms and let them cook down. I will season with salt and pepper as these cook. Mix in Bell Peppers and allow to get translucent, 2-3 minute. Add potatoes and cook for about 8 minutes once the potatoes are almost finished I will throw them in the oven at 350 for about 5-10 min to finish them off. These are great as a side for scrambled eggs or top with over medium/easy eggs.
