Roasted Chicken

This is a SUUUPER easy meal and I used the carcass to actually make homemade chicken broth. You can find the recipe for that here.

1 whole chicken
3 tablespoons Olive Oil
1 teaspoon Salt
1 teaspoon Pepper
Fresh Herbs

Preheat oven to 450 or prepare crockpot on low for 8 hours. Remove any inners of the chicken. Rinse inside of chicken under cool water and place breast side up in a roasting pan or in crockpot. Season with salt and pepper and fresh herbs. Roast the chicken for 1 hour and 30 minutes in the oven or cook on low for 7-8 hours in crockpot(if I cook in the crockpot I will usually add about 1 cup of water). You can also add veggies along the side or in the crock pot as well. We topped this of with a chimichurri sauce that you can find here.
