Perfect Seared Chicken

We looooove chicken in our house. This is a great recipe to make up several ahead of time for salads, lunches, etc.

2-3 skinless boneless chicken breast
1/2 tsp salt
1/4 tsp pepper
1/2 tsp Italian seasonings
2 tbsp EVOO or coconut oil

Reheat oven to 350.  Season chicken breasts on both sides with salt, pepper, Italian seasoning. In large oven safe skillet, melt cooking fat until hot. Place chicken top side down in pan and sear 3-4 minutes. Chicken should pull off once seared. Using tongs flip over and then put entire skillet into oven to finish cooking.  10-15 mins should be long enough depending on thickness of the chicken. Let chicken rest for 5 minutes. We topped with Roasted Red Pepper Sauce and sautéd veggies.
