These are a great way to satisfy the kiddos sweet tooth for pancakes and still stay on track.
2 large eggs
1 ripe banana
1 tsp vanilla
1 tsp of add ins (I used 100% cocoa)
Mash the banana up and whisk in the eggs. There will be clumps of banana so that is ok. Remember there is nothing really holding them together so keep them smaller. Add the additional flavorings and mix thoroughly. Drop in spoonfuls on to a griddle and flip after about 2-3 min. You can also add additional toppings like fruits and such to make for a yummy treat.
